I love breakfast food and pancakes if you have noticed are one of my favorite breakfast foods. I love pancakes because of their versatility, I love the fact you can make them plain, add in chocolate chips, blueberries, and even different spices. I love creating fun meals for my kids with pancakes and with pumpkins in season I have a wonderful pumpkin pancake recipe that is perfect for this time of year.
Gluten Free Holiday Pumpkin Pancakes
1 cup gluten free all purpose flour
1/2 cup cornmeal
1/4 cup honey
2 tbsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp all spice
1 egg
1 cup milk (we use almond milk)
1/2 cup canned pumpkin or fresh purée
1 tsp vanilla
- Mix the flour, cornmeal, baking power, salt, cinnamon, and all spice together in a medium mixing bowl.
- In a separate bowl add in the honey, egg, milk, pureed pumpkin and vanilla. Whip these ingredients together until they are smooth and then add them in with the dry ingredients.
- The batter is thick, but you cook these pancakes as you would normally cook any pancake.
