Two years ago this month when I took the plunge for my son, and tossed gluten out the window, I felt a bit overwhelmed and also afraid we would never have a decent-tasting meal again. One of my family’s favorite mealtimes is breakfast. Like many families, not only do we love to eat breakfast food in the morning, but also for dinner. Besides potato tots, my kids love pancakes. I was at a loss, because I did not know how I would survive without my favorite pancake mix. After much research, I came across a product of which those who were already on gluten-free diets raved. It was a Pamela’s™ Product called Baking & Pancake Mix.
After a bit more research and some mileage on my pickup truck, I found a local grocery store that carried it. I purchased the smallest bag I could find. I was skeptical, because I grew up on the more popular brands, and I did not think there would be another mix out there as good, let alone a gluten-free mix that would approach any gluten product in terms of taste.
The ingredients and instructions were easy. They were just pancake mix, water, oil and eggs mixed together. I heated up my griddle and poured out the first round of pancakes. The batter cooked like my other mix, and it even formed the little air bubbles to let me know when to flip. I was able to make about a dozen beautiful golden pancakes, and the aroma in my kitchen was delicious.
I put a pancake on each of my child’s plates, and put a little peach jam on the pancakes for them. Before I could even get back to serve myself, my kids pancakes were devoured, and they were begging for more. I ended up making the entire bag of pancake mix that morning, and by dinnertime not a pancake existed!
Since that morning, my family has consumed many large bags of Pamela’s™ Baking & Pancake Mix pancakes. They are such a hit in my family that every birthday meal must now include Pamela’s pancakes. It is simply the best pancake mix I have personally eaten to include all mixes and even restaurant pancakes. The pancake is a perfect mix of flavor and texture, and is light and fluffy, making it an absolute delight to eat. I now make Pamela’s pancakes simply to have as snacks around the house, because my kids love to eat them even plain. They even make great sandwiches for road trips to all my son’s therapies.
